Batch Size:  5 gallons Boil Time:  60 min.
Starting Gravity:  ~1.050 Finishing Gravity:  ~1.012
Primary Fermentation: Secondary Fermentation: 2 weeks at 68 F

0.75# Breiss Dextrin (Carapils)
0.25# Baird Crystal L40
0.25# " " L90
1.5# M+F Pale 2 row
0.75# Baird chocolate
0.25# DWC Caramunich
1.0# dark wheat malt
0.25# flaked wheat
3.3# NWestern weizen extract
2.0# M+F Light dry extract
0.66 oz Hallertau leaf 50 min
0.33 oz Saaz pellet 50 min
0.66 oz Hallertau leaf 20 min
0.33 oz Saaz pellet 20 min
0.66 oz Hallertau leaf 2 min
0.33 oz Saaz pellet 2 min
Weihenstephan Wyeast 3068, 22 oz starter

 

Procedure:

Mashed grains 50C/30 min, 60C/ 25min, 63-68C/25min
Brewed 6/25, 6 days in primary ~68 degF,
2 weeks in secondary ~68 degF, Bottled 7/15/97
